4 ounces smoked salmon
24 cherry tomatoes
3 tablespoons Dijon mustard
1 tablespoon honey
1 tablespoon cider vinegar
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons chopped fresh dill
Combine mustard, honey, and vinegar in to bowl and mix.
Whisk in olive oil and add in diced dill.
Slice top and bottom of cherry tomatoes off. Remember keep one end (the bottom) completely closed still. Carefully scope 1/2 of insides out. Tip upside down and allow tomato to drain for 15 minutes.
Layout 2 inch slice of smoked salmon. Lightly spread dill sauce across it. Add two capers.
Roll up smoked salmon and place in the open side of cherry tomato.
